The earliest Chinese eateries in New York catered strictly to the needs of Chinatown&#8217;s turn-of-the-century &#8220;bachelor society.&#8221; Over time, however, Chinatown&#8217;s restaurant industry would reflect the neighborhood&#8217;s changing immigrant population and needs.
