Learn to identify wild greens and their uses as The Gohan Society takes a field trip with forager Tama Matsuoka Wong, a Japanese American who runs Meadows and More and is the author of Foraged Flavor, a James Beard-nominated field guide and cookbook that she wrote with Eddy Leroux, Chef de Cuisine at Daniel and a former recipient of The Gohan Society’s U.S.-Japan Culinary Exchange Chefs Scholarship Program.
Matsuoka Wong will host a group of 10 to 15 people, discussing the traditional and new ways that chefs in the U.S. and Japan are beginning to use wild greens in their cooking. After gathering greens, she will provide us with some recipes on how to cook what we’ve gathered.
A group is traveling together from Manhattan, or participants can meet the group at Meadows and More. Details about the exact times and locations will be provided to the final list of participants.
Lunch will NOT be provided. The group will have an open-air picnic, so bring your own o-bento!
