Buckwheat noodles, or Soba, are not wheat-based unlike most other noodles in Japanese cuisine (although Soba often has some wheat). Soba contains a variety of nutrients conducive to maintaining a healthy diet. Mr. Shuichi Kotani, a noodle expert, will give an introduction to the world of Soba, including its history, nutritional value, ingredients, and a demonstration of how to make Soba from scratch. Come see Mr. Kotani demonstrate the skill behind handmade Soba and taste some fresh Soba!
